Nothing better than warm and cozy comfort food in the winter! Join us for another installment of Not Your Average Kitchen - The Winter Edition. Today’s woman dreamer, Renu Bhardwaj (@hey_renu) is a popular food blogger based in Glasgow Scotland. With over 22 thousand followers, her platform highlights her delicious vegan/vegetarian recipes and her passion for sustainability in the kitchen. Renu shares two must-try recipes for the cold weather, including a yummy tomato soup and her spicy masala roasties. Enjoy!

1. Tell us your story. You are based in Glasgow, and are a Instagram creator for vegan/vegetarian recipes. What inspired you to start your platform?

My journey started when my family and I were part of an Aldi TV campaign that gave me the encouragement to finally start my food page. After lots of imposter syndrome situations, I fully invested in my page and bought over expensive cutlery, props and yes I am totally addicted to little kitchen props.

I have always loved food and have a passion for it. Being a busy mum, I strive for a work-life balance. My love for food stems from family meals I ate around my mum’s kitchen as a young girl. I love recreating the times I had growing up in an Indian household while blending in Scottish home influences with a twist for my children. During lockdown, we had more exposure to our fridges and the food we had in our house, thats how my focus shifted to reducing food waste and creating recipes from what we have in our house and promoting quick easy hack recipes too.

2. You have some exciting original recipes. Where do you find your inspiration in the kitchen?

My mum is a great cook, so I always find inspiration from her, I also try and make a quick version of what I remember from the food I have enjoyed on holiday, India, and anywhere else that I have been inspired. I can wake up some mornings and have dreamed of a recipe that I just need to simply must make.

3. As the platform for women dreamers, what is your next big dream for your platform?

I would love to do more cook along, share my recipe reach with more pages and I would love to share one of my recipes on TV one day! People tend to get scared or worried about food, budgeting and trying new recipes or spices and I would love to be able to make this easier for everyone with
